My fiancée and I have bought a home together and both are signed on the mortgage. Can one of us deduct all the interest and taxes and the other take a standard deduction?

Since you both have to file as Single, it does not matter who takes the standard deduction or itemized deduction.

Since both of you are on the mortgage, either of you may claim the mortgage interest deduction, if you itemize your deductions on Schedule A.
