Married filing separately, my wife is claiming all house and property tax deductions, should I just say no when prompted to enter mortgage expenses and property tax?

Yes, as long as you are both legally obligated to pay the mortgage... you can split it or one of you may claim it.  Just keep in mind that you both must itemize (or both of you must take the standard deduction if filing separately).

Please read this TurboTax FAQ for additional information on "Can I deduct my mortgage?": Can I deduct my mortgage?
