I quit my last job in the middle of January, this year 2018. But also started a new job a week after, will I be adding my new job for taxes?

The taxes you are filing this year is for the tax year 2017. All wages reported in your 2017 taxes should be income earned in 2017. 

To file for 2017 taxes, only use 2017 W2's or earned income that was earned in 2017.
