If it is the same mortgage, just a new "lender," then use the same principal balance that was shown on your previous lender's 1098.
There should not be an problem with you doing this, but if the IRS questions you, you can easily explain what happened. You can also request a corrected 1098 from the lender, but they rarely issue them.
