Am I allowed to include the amount that I spent on COBRA and employer-paid health insurance as medical expenses or are these expenses eligible to be deducted somewhere else on my 2021 Tax return?

Health insurance premiums you paid are qualified medical expenses. If you are itemizing your deduction, you can add them to your medical expenses. The amount exceeding 7.5% of your AGI can be deducted.
So both the amount I paid for my COBRA and the amount that I paid towards my employer-paid health care count as medical expenses in my 2021 tax return?
For the months that I had employer-paid healthcare for 2021, I still had to pay around 20% of the monthly premium. I will be able to tabulate this amount for my 2021 medical expenses in my 2021 taxes, correct?
Yes, correct. As long as you paid out of your own resources, you can take the deduction.
