Colonial Farm Credit is the lender that we have for property we bought in Virginia. We pay the real estate tax ourselves. Can we deduct it?

The real estate tax that we paid does not show on the 1098 that Colonial Farm Credit sent us.

Yes, you are able to deduct the real estate (property) taxes paid, regardless of whether they were paid through escrow or you paid it directly.
