Can I run & create separate scenarios for itemized & standard deductions --by saving itemized and standard deductions in 2 separate files, so I don't lose itemized data?

I have entered my itemized data already. If I then run the standard deduction option I don't want to lose my itemized data (8 hours work).

The best way to do that is to create a second "dummy account" so you can play with scenarios, including just taking the standard deduction.
