Can I remove itemized information that was saved originally? I want to use standard deduction

Yes. You can go through the interview and remove the entries you've made. However, that may be tedious, so I recommend manually selecting to use the itemized deduction instead.

If you want to manually switch, here's how, from How do I change from the standard deduction to itemized (or vice-versa)?

1. "Go to the screen: Based on what you told us, [either Standard Deduction or Itemizing deductions] is right for you, and select Change my deduction. (Instead of using the link, you can also manually navigate to Federal > Deductions & credits > Deductions & credits Summary > Continue > If applicable, continue through any summaries> Now you will arrive at Itemizing/ standard deduction summary screen.)
2. On the Which deduction do you want to take this year? popup, you'll see the dollar value of each deduction type.
3. Select the type of deduction you want and Continue."

if the standard deduction exceeds your itemized deductions, TurboTax should use this and not submit Schedule A which means there's no need to delete the itemized deductions info.
