Under deductions& Credits - under sales tax and places you lived, my son who is active duty has the entire year listed as his state of residency (Texas) with that states sales tax percentage. Does he need to change it to the state where he is stationed or to any of the states he visited for training purposes?

No, he should use his state of residence when claiming the state sales tax deduction.
AD/MIL state of residence will never change unless the service member goes to their local personell office and completes DD Form 2058. See https://home.army.mil/stuttgart/application/files/1415/4712/5692/HRSLR.pdf for details on what is usually required to change one's SLR or HOR, which are basically saying the same thing, different ways.
SLR - State of Legal Residence - Usually applies to military spouses
HOR - Home of Record - Applies to active duty military.
Domicile - same as above
