What is the difference between PY NC Source Income and NC Resident Income? We moved to NC in July, so we were NC Residents for part of the year, so both seem to apply.

You are a part year resident. You don't want to be taxed in NC for income you earned in another state. Once you have lived there an entire year, you will be a resident. NC PY source income is only the income from the time you actually resided there.
