I live in WA state but work in OR. I understand that any wages earned while in OR are subject to income tax. My spouse works in WA.
For OR state tax filing purposes would this be a single (rather than married) filing for only me since none of my spouse's income was earned in OR?

On an Oregon state return you can file as Married Filing Separately even if filed as Married Filing Jointly on a federal tax return.
You cannot use the Single fling status since you are legally married. You can only use Married Filing Jointly or Married Filing Separately for the filing status on the non-resident Oregon state tax return.
