All of the income is subject to Federal taxes. On the side gig, you will pay taxes on the net profit (income less expenses related to earning that income.
On the NY return, you will show the income you earned while a NY resident. You will file a part year NY resident return. So if you for example you earned $5K, and while in NY approx 20% of this was earned, you will have $1,000 income subject to NY tax.
