How do I fix this? State return is forcing me to select one of "Full Year Nonresident/Part-Year Res - Moved In/Part-Year Res - Moved Out" - none of these apply.

I was a full year CA resident, my wife was a resident for most of the year (250+ days, all time after April 2018). None of these seems like the right answer.

Select the "Moved in" option.  If both of you were not full-year residents, then your California return will be a joint filing either as part-year residents (even if one of you lived in California all year), or as nonresidents (if one of you lived outside of California all year).  This choice is so that the part of the year that your wife lived outside of California, her income (if earned outside of California) is not taxed by California.  "Moved In/Part-Year Resident" best describes your situation.
