Convenience of the Employer in NY State

I live and work remotely in Wisconsin. In late January, I took a job offer from a multinational company. The company has one physical American office, based in NYC.

From what I understand, NY State possibly can claim I owe them state income tax based on their "convenience of the employer" law. But can NY really claim that working in Wisconsin is at my "convenience" when I was specifically offered a Wisconsin-based role?

Here is my offer letter:
You are being offered the position of Software Engineer, reporting to the Engineering Lead. This is an exempt position based remotely from your residence located in Appleton.


Additional facts:
One week a year (five work days), I travel to NYC to meet with the French team*. I do not have an assigned desk in NYC and work in the visitor area for the brief periods when I'm not in meetings.

The company currently withholds my state taxes to Wisconsin.

The Engineering Lead I report to works remotely from North Carolina.

I'm aware that the five days a year I work in NYC are taxed by NY state regardless of the convenience of the employer rule.
