Normally a mail date is sufficient but at this point, they really should have cashed the check. If you have proof of mailing it, that might be sufficient evidence.
If the amount is over $3,000 you can claim a credit for it anytime. If less than $3,000, I would be concerned that they should have received it.

What would count as proof of mailing? Photographs? Having sent it with a tracking number via UPS or USPS?
Sending it using UPS or USPS with a tracking number and receipt that shows when it was mailed and when it received will give you the proof you need that it was sent.
