If I give tennis lessons, but I don't have a company, is that considered a hobby or a business? Meaning, do I only pay income tax or do I also have to pay self employment tax?

You are self-employed. You are getting paid for teaching people how to play tennis.

It's a business. You are the company. It's called a sole proprietorship.

A sole proprietorship and being self-employed are two different terms for the same thing.
