If I charged sales tax on an eBay sale, when do I pay the government those taxes? Should I do it right away, or do I do it when I file my taxes the following year?

Sales taxes are by state. They are not reported on an income tax return.

You would have to contact your state tax agency for how to report the sales taxes you collected on your sales.

Sales tax and income tax are two different things. TurboTax does not deal with sales tax. Typically a sales tax is charged by the state. But entities below the state level can also impose sales taxes. For example, in addition to the state sales tax there can also be a county sales tax or city sales tax. You should have been provided this information when you registered your business with your state and local taxing authorities. So if you no longer hae that information you'll need to contact your local taxing authorities for guidance.
