Go ahead and file the 2021 return and claim the missing stimulus. The IRS is 10 million tax returns behind as of the start of tax season this year and it doesn't make a lot of sense to wait for those amended returns to be processed in order to file your 2021 return.

I still haven't received a single stimulus payment or check - I amended my 2019 and 2020 taxes over 8 months ago to recuperate any payment but the IRS is still processing my amendments for over 20 weeks now. Should I file my 2021 taxes and claim the missing stimulus or should I wait to hear back from the IRS on my amendments?

The third stimulus payment only is reconciled on the 2021 return. Do not enter anything about the first 2 on the 2021 return.
