I am trying to print a copy of my 2018 taxes to mail into the IRS and it shows 201 pages, how many of these do I need? some say keep for my records

You print, sign, date and mail the Form 1040 and all other forms and schedules that have an Attachment Sequence Number located in the upper right corner of the form or schedule. All other worksheets and information only pages are NOT sent with the tax return. Include with the mailed return any forms W-2 and 1099 which have taxes withheld.

they have page numbers in the right hand corner, I'm not sure what attachment sequence numbers are

That is for the community thread/chat/question area. It doesn't affect anything. It is based on number of questions and time you spend in the community chat area.

Where are you seeing page numbers?

When you go to the print center you should see an option to print All official forms required to mailing. That will allow you to print just what you need and in the right order for mailing to the IRS.
