Would I have a 1099-INT or 1099-R if I didn't take any distributions from my retirement/investments?

If you did not have distributions from your retirement account(s), you will not receive a form 1099-R.

Form 1099-INT reports interest income from banks or brokerage houses.

Form 1099-DIV reports dividends received.

In some rare cases, it is possible to receive a 1099-R without physically taking a distribution for the current year. It's possible that you oversubscribed in your retirement account in a previous year and the excess withdrawal is being accounted for this year.
