Do you pay more social security withholding when you claim more than yourself on payroll?

I claimed 5 when I was hired but my situation has changed and I’m not claiming all the dependents on taxes.

The number of allowances that you claim on your form W-4 does not affect social security tax. It only affect your federal and state withholding taxes. The less allowances you claim, the higher your tax withholdings will be.
