I know what my 1099 employer paid me but they haven't sent their form. If I enter it, will TurboTax know if it's correct or not? I've put in and no red flag.

No. TurboTax only knows what you tell it - right or wrong. It cannot verify your data.

When self-employed as you are, you are required to report all of your business income from all sources weather you get a 1099-MISC or not. The form is not required for you to report it. But not having it does not negate your requirement to claim the income.
