I am a professor in North Carolina currently on sabbatical in Utah (where I have been since 08/12/2016). I rent in NC so I no longer have a home address there. I did not make any income in Utah in 2016. I am confused as to how to complete the states I liv

You can use a Utah mailing address on your tax returns without changing your domicile and becoming a legal resident of Utah. I assume that your intent is to return to North Carolina at the end of your sabbatical. For tax purposes, you do not actually reside in Utah; your stay is of a temporary, albeit extended, nature.

Since you had no Utah-sourced income, you have no state tax filing requirement. 

Your North Carolina educational institution continues to pay you, I presume, and this income would be reported on a North Carolina resident tax return, even though your temporary mailing address is in Utah.
