I’m a first time home buyer. I’m not sure if I should have added my mortgage to my taxes since I technically didn’t pay my first payment until January of this month.

If you didn't make your first payment until January of 2018, then you didn't pay any interest to the mortgage company. However, you probably paid some interest at closing. This would appear on Settlement Statement, the HUD 1.
