I drive both Lyft and Uber as self employed. Should I make two separate “source of income” profiles for these? Or just summarize them together?

Since both jobs are basically the same (ride share) you can certainly combine them on one schedule C, unless for some reason you want to keep them separate.  Since you probably drive for both companies on the same shift, at least some times, it will be extra work to split your mileage and car costs between two different schedule Cs.
