How do we replace? We lost all of our tax documents for 2018 in a house fire and we need to file. I don’t know everything that we had. How do we get the documents back?

The documents you need to prepare your tax return come from a wide variety of issuers, and it will be hard to gather all of them together again after such an unfortunate event as a fire. So sorry.
