Help topics seem outdated and refer to legacy-named products. Can I use the Self-employed version for my personal and s-corp taxes?

The online Self-Employed edition is the same software as the Home and Business desktop edition.  You can complete a personal tax return, Form 1040, with either program.
What taxes are you referring to for the S-Corp?  Do you need to file an S Corp tax return?  Or do you need to enter a Schedule K-1 received from the S-Corp.

I'm not certain. I have an S-corp and have had an CPA firm file both personal and business taxes the past several years.  However, in 2016 I had no income or business at all through my corporation and very little personal income.  I'm planning to file myself this year in lieu of the CPA firm.

If you needed to file your S Corp return, Form 1120S, and wanted to use TurboTax, you would need to purchase the Business Edition from this website - https://turbotax.intuit.com/small-business-taxes/

The Business Edition can only be installed on a Windows based personal computer, not on a Mac or online.  The Business Edition cannot complete a personal tax return.  So you would still need the TurboTax personal edition to complete your personal return.
