Im a caterer and feed staff at every event. Can I assign a value to those meals and write off the expense? If so would it be meals, misc, or supplies for the food costs?

Yes, you can deduct the meals provided to your staff but they are now subject to the 50% meal limitation under the new tax laws.
You can use the meal cost (cost you would charge a customer) for the cost of the food.
