My wife paid tuition for an undergraduate class she needed in order to complete her graduate degree. We have a 1098-T. Is her undergraduate tuition deductible?

Yes, Undergrad Education Expenses greater than Scholarships/Grants received may qualify for the American Opportunity Credit.
Grad tuition expenses may qualify for a Lifetime Learning Credit.
