Do I have a choice in accepting the American Opportunity Credit?
I qualify for this credit, but I would rather not take it but I don't see an option anywhere to decline this credit. Interesting.

If you don't enter any Education Expenses (or 1098-T) in your return, you won't qualify for the American Opportunity Credit.
You could take the credit and make a donation to the school or a needy student.

Yes.
Type letme (no space between let & me) in the search box. When the dropdown list appears, click on letme rather than "jump to letme''. On the next drop down, click on the "jump to letme” link.
TT will give you the option to select another tuition credit or deduction.
