Can I deduct payment for a required course for certification as a high school soccer coach?

Yes, that would be deducted as a job expense and reported on your schedule A as an employee.

This would need to be a course you took when you were already employed as a coach, if this was a certification for a NEW profession, it would not be eligible.

If you were a coach and you paid for this course, enter it as a job expenses under:

But if you are not employed by the school as a soccer coach, but instead offered a contract agreement to coach soccer for the school as a non-employee (1099MISC), then see this, it applies equally to coaches:  <a rel="nofollow" target="_blank" href="https://ttlc.intuit.com/questions/3962896-referee-certification-class">https://ttlc.intuit.com/quest...>
