Where in Turbotax can I indicate that this year's S-corp return is the final return as an S-corp? Next year will go back to Schedule C

If you're using TurboTax Business, it should be at the beginning of the program.

If not, you have the wrong program (i.e., a 1040 prep product and not the one you need to prepare an 1120-S).
