Under Business Profile in Business Section (where I'm doing my Sole Proprietor taxes), do I need to list my EIN even though I did not have it while I was a Sole Proprietor?

No, if the EIN was assigned to your S-Corp, do not include that for Schedule C in your personal tax return.
