If I use Schedule C profit as an adjustment to income to pay for self-employed health insurance, can I also use the same profit to fund a self-employed retirement plan?

Not really.  If you have $10,000 in profit and fund a self-employed retirement plan with $2,500 even if you paid $9,000 for health insurance you would not be able to deduct more than $7,500 (10,000-2,500) in health insurance premiums. 

So, you cannot get a deduction for the same dollars spent.
