I sold shares in a partnership taxed as a S-Corp in 2018, so this is the last year that I will receive that particular K-1. How do I record the gain/loss on the sale?

you'll need to use the cap gain wks -     enter the sales price, your basis, date acquire, date sold, name of company. check not reported on 1099-b

In addition to @Anonymous response, I am still somewhat confused based on the current facts.

You indicate that you sold shares in 2018 "so this is the last year that I will receive a K-1".

This is not clear to me.  Are you working on your 2018 tax return?

When you state "this is the last year...." are you referring to a 2018 K-1?  I assume you have already received this final K-1?

Just want to make sure we understand the facts.
