If you used the American Opportunity credit in past years, can you tell from your past tax returns?

Yes, you can.  You claim the American opportunity credit by completing Form 8863 and submitting it with your Form 1040 or 1040A.You would see the nonrefundable part of the credit on Form 1040, line 50, or on Form 1040A, line 33. You would see the refundable part of the credit on Form 1040, line 68, or on Form 1040A, line 44.
