Your refund amount changes as you enter documents because TurboTax calculates your tax liability as you enter your documents. When you enter deductions (student loan interest, IRA contributions, itemized deductions) they lower your taxable income. When you enter credits (Child Tax Credit or Education Credit) they reduce your tax bill directly, both of which increase your refund.
Your tax refund is your total tax payments (withholding/credits) minus the tax you actually owe. If you paid more than you owe, you get a refund.
