My husband and I are filing jointly. However, as of December 1st I became a SAHM. At that point my husband claimed me and our daughter. How do we note that on our taxes?

No.  Your husband cannot "claim" you.  A spouse is never claimed as a dependent.  You just file a joint return and claim your child on that return.  There is no need to put anything on your tax return about being a stay at home mom as of December.  ALL of your combined 2018 income must be on the joint return.
