My 21 y/o claimed herself on her taxes, but she is our dependent. She is filing an amended return. Should we file for an extension, or file without her then amend?

You could file now without her and later amend your return. However, you can also file and claim her now by mailing your return. That may be the quickest way to get your full refund.
