If I filled out my son's taxes on Turbo Tax last year, and this year he wants to do it himself with his own account, how can he change it?

He would have to create a new account (UserID & password).

Sign out of TurboTax Online.
Select the TurboTax Online product you want to use for the second return and proceed.
On the Create your account screen, set up a new user ID for the second return. ...
After you've created the new account, you can start working on your return.
