I accidentally filed single for the 2018 tax year, so I am filling out a 1040x form to change my status to married, filing separately. When I go to print out my forms, there are lines prompting for my spouses signature. Does he need to sign them even though we are filing separately?
If he does need to sign, I have a general power of attorney that covers his tax matters that was issued before he went on deployment. Would I need to include a copy of the power of attorney?

No, if filing separately, then you don't need his signature on your Form 1040X.
If you look at the spouses signature line it should mention "If joint return, both spouses must sign" and you are not filling a joint return.
