I need a signed copy of my 1040 but all I can seem to download is one without a signature and date. Is there way to get a signed copy?

No.  You just have to sign it in ink yourself.

When you e-file there is no written signature. An e-filed tax return is signed electronically. You didn't sign anything before you e-filed.

If you have to give someone a signed copy of your tax return, print the tax return and sign it with a pen in the space that says "Sign Here" on page 2 of Form 1040 or page 3 of Form 1040-SR.
