I have not yet filed my 2018 tax returns - as it needs to be mailed out. How do I now change so I can pay the IRS via a wire transfer rather than a paper check?

You can simply make the wire payment to the IRS.  You don't need to note this on your tax return.  You can simply discard the 1040-V payment voucher that printed out.
