Not sure what you are trying to do. There is no way to "update" your 2019 tax return to include 2020 income. Ask the lender what they want you to provide them with for the 2020 P and L.
Since it is the end of August you should know your Income and expenses through June from your accounting program like in Quicken or QuickBooks. Print out a report for Jan-June or Jan 2019-June 2020. Or write the amounts on a blank schedule C. Cross out the 2019 and write June 30, 2020 at the top.
