How will I know if the IRS received my amended return? I type my information on there "where is my amended return?" site, it says "no information available at this time".

The IRS processing centers were closed for several months because of the Covid-19 pandemic and did not process any mailed tax returns, including amended returns. They are just now starting to reopen, but they have limited staff and a huge backlog, so it will be a long time before your amended return is processed or any status information is available. An IRS spokesperson recently said that they have about 11 million pieces of unopened mail.

If my amend was filed incorrectly for some reason would they let me know? or would I be able to refile in 2021?

If your amended return was prepared incorrectly IRS will send it back to you.

If your amended return had an error, you may have to file a second amendment to correct the first amendment.
