Can my tax file be restored from my saved .pdf so that I can amend it?

My 2018  .tax file has been corrupted, but I have the saved .pdf

No a .pdf cannot be converted to a .tax file. You would have to recreate your .tax file as originally filed using the 2018 program and then start the amended return. Did you use the CD/download product to prepare the original return?

TurboTax overwrote my original tax file instead of creating a 1040X when I attempted to amend the original.

If the .tax file of your original return no longer exists, you would have to recreate it using the information on the .pdf file. After you have recreated it and before you start the amended return, save it to your computer. After you finish the amended return, save it to your computer with a different file name so you don't overwrite the original return with the amended return.
