Yes, you can amend your tax return to delete a dependent.  It may also affect other credits besides your EIC once you delete your dependent.

Once your tax return is fully processed and you receive your refund, or your balance due is deducted from your account, you can file an amendment. When you make your amendment to delete your dependent, TurboTax will calculate your new refund or balance due based on your changes. If your original refund was more than what you should have received when you make the changes, you will have a balance due.
