Can I amend my taxes with the 1095-c form? Will it impact my return?

The 1095-C does not need to be entered into your return. It is for informational purposes. If you have already entered the correct months as being covered by health insurance, you should not need to make any changes, or amend. You can simply keep this form with the copy of your return. If you need to review the health section to be sure:
