Once the IRS receives the mailed copies of my returns. Will Trubotax be updated to "received" or something. How Will I know if the IRS received my returns otherwise?

No, TurboTax does not get any information about a mailed in return. The IRS or State does not acknowledge when they receive your mailed in returns. The following is from the IRS
Mailed paper returns: If you filed a paper return, please allow 4 weeks before checking the status. Refund processing time is 6 to 8 weeks from the date the IRS receives your tax return.

If you have a State refund, click on the following link, then click on your State
