I received a corrected 1098-T after I filed my taxes. I completed a 1040X. Do I need to mail any additional forms with the 1040X besides the corrected 1098-T?

Yes. Along with the Form 1040X, include a copy of every form or schedule that changed as a result of your amendments.
In your situation, that would include, at a minimum, Schedule 3 (Form 1040) and Form 8863.
